Guyot-pruned vineyards, with predominantly east and south-east exposure.

VINIFICATION

soft pressing of the hand-picked grapes, in horizontal membrane presses and low temperature fermentation in heat-conditioned steel tanks.
In the spring following the harvest, the wine is bottled.
After 24 months from refermentation, remuage, degorgement and packaging are carried out.

ORGANOLEPTIC CHARACTERISTICS

fine and persistent perlage, straw yellow color with golden reflections. Intense, fruity aroma, with a pleasant hint of yeast and bread crust.
Full, savory and dry taste, with good persistence, reminiscent of the olfactory sensations.

RECOMMENDED COMBINATIONS

aperitifs and throughout the meal, with a preference for dishes with delicate flavors based on meat and fish.
