WINEMAKING TECHNIQUE
soft pressing of hand-picked grapes, in a horizontal membrane press and low-temperature fermentation in steel thermo-tanks.
After 30 months of refermentation, the remuage and degorgement steps are carried out, and then the wine is packaged.
ORGANOLEPTIC PROFILE
persistent perlage, intense straw color with a golden glint. Strong aroma, with pleasant hint of yeast and bread crust.
Full flavor, sapid and dry, good persistence, good nose.
FOOD PAIRING
Excellent as an aperitif. Goes well with delicate tastes such as shellfish and raw seafood.
SERVE AT 4 – 6 °C.
